Apple Cake

This is one of those desserts that you can probably whip up with things you already have in your pantry plus a few apples. It’s soft and fluffy and perfect with a cup of tea in the morning.

Ingredients:

  • 3/4 cup brown sugar

  • 2 large eggs

  • 1/3 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 2 small apples, peeled, cored, and chopped into 1/4- to 1/2-inch pieces (about 2 cups)

  • 1/2 cup toasted walnuts, chopped

Method:

  1. Preheat the oven to 350°F. Butter and line a 9-inch round baking pan bottom of the pan with a round of parchment paper.

  2. In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, and salt. Whisk until smooth and emulsified.

  3. Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.

  4. Use a rubber spatula to fold in the apples and the nuts.

  5. Pour the batter into the prepared pan and use a spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan.

  6. Bake until puffed and golden, about 30 to 40 minutes. Set the pan on a rack to cool for about 15 minutes before eating.
