Banana Bread

Ah banana bread. A true comfort food in my books. One time my friend was buying groceries online and accidentally bought 6 bunches of bananas instead of 6 individual bananas! You can imagine the amount of banana bread she ended up baking the following weekend.

Ingredients:

  • 3 very ripe bananas, peeled

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/3 cup melted coconut oil + coconut milk

  • 1/4 cup brown sugar 

  • 1 1/2 cups all-purpose flour

  • 1/4 cup coconut flakes

  • 1 tsp baking soda

  • 1 tsp baking powder

  • Pinch of salt

  • Pinch of cinnamon

  • Chocolate chips (optional)

  • Chopped walnuts (optional)

Method:

  1. Preheat the oven to 350°F and grease a 4x8-inch loaf pan.

  2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Beat in the egg and vanilla extract. Add the melted coconut oil and milk and sugar.

  3. Mix together the flour, coconut flakes, baking soda, baking powder, salt, and cinnamon.

  4. Fold dry ingredients into wet ingredients until just combined. Add chocolate chips and walnuts if using.

  5. Pour the batter into the prepared loaf pan. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Enjoy!
