Lemon Bars

These lemon bars are the perfect combination of sweet and tart. And the gooey filling is reminiscent of those lemon pudding cups we had as kids!

Ingredients:

  • 1/2 cup butter

  • 1 cup all-purpose flour

  • 1/4 cup powdered sugar

  • 1 tsp vanilla

  • 1 cup granulated sugar

  • 1/2 cup fresh lemon juice

  • 3 eggs

  • 1/4 cup all-purpose flour

  • Powdered sugar for garnish

Method:

  1. Preheat oven to 350°F and line a 8x8 baking pan with parchment paper.

  2. Combine butter, flour, powdered sugar, and vanilla in a food processor until a dough starts to form. You may have to add ice water 1 tablespoon at a time in order for the dough to come together.

  3. Press dough evenly into the bottom of the prepared pan. Bake 12-15 minutes or until edges are barely golden brown.

  4. While crust bakes, make the lemon filling. Whisk sugar together with lemon juice, eggs, and flour. Once the crust is done baking, pour lemon filling over hot crust.

  5. Bake 20 minutes or until set. Cool completely, cut into squares and top with powdered sugar.
