Orange Raisin Cake

I’ve been making this cake for years. It’s guaranteed to be a hit - even with people who claim to hate raisins!

Ingredients:

  • 3/4 cup sultana raisins

  • Juice and grated rind of 1 large orange

  • 3 tbs ginger ale

  • 3/4 cup butter

  • 3/4 cup sugar

  • 3 eggs

  • 1 1/2 cups all-purpose flour

  • 1 1/2 tbs baking powder

  • Pinch of salt

  • Orange juice + icing sugar

Method:

  1. Soak the first three ingredients overnight.

  2. Using an electric mixer, beat butter until creamy. Add sugar and then eggs one at a time, beating well after every addition.

  3. Sift together all dry ingredients.

  4. Gradually add dry ingredients to wet ingredients.

  5. Fold in soaked raisins.

  6. Line a springform pan with parchment paper and bake at 350˚F for 40 minutes.

  7. Let cool for several hours before icing.
