Orange Raisin Cake
I’ve been making this cake for years. It’s guaranteed to be a hit - even with people who claim to hate raisins!
Ingredients:
3/4 cup sultana raisins
Juice and grated rind of 1 orange
3 tbs ginger ale
3/4 cup margarine
3/4 cup sugar
3 eggs
1 3/4 cup all-purpose flour
1 1/2 tbs baking powder
Pinch salt
Orange juice + icing sugar
Method:
Soak first three ingredients overnight.
Using electric mixer, beat butter until creamy. Add sugar and then eggs one at a time, beating well after every addition.
Sift together all dry ingredients.
Gradually add dry ingredients to wet ingredients.
Fold in soaked raisins.
Line springform pan with parchment paper and bake at 350˚F for 40 minutes.
Let cool for several hours before icing.
