Orange Raisin Cake
I’ve been making this cake for years. It’s guaranteed to be a hit - even with people who claim to hate raisins!
Ingredients:
3/4 cup sultana raisins
Juice and grated rind of 1 large orange
3 tbs ginger ale
3/4 cup butter
3/4 cup sugar
3 eggs
1 1/2 cups all-purpose flour
1 1/2 tbs baking powder
Pinch of salt
Orange juice + icing sugar
Method:
Soak the first three ingredients overnight.
Using an electric mixer, beat butter until creamy. Add sugar and then eggs one at a time, beating well after every addition.
Sift together all dry ingredients.
Gradually add dry ingredients to wet ingredients.
Fold in soaked raisins.
Line a springform pan with parchment paper and bake at 350˚F for 40 minutes.
Let cool for several hours before icing.
