Banana Chocolate Chip Muffins

These muffins are super easy to whip up and a perfect on-the-go breakfast/snack!

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/3 cup fine coconut

  • 3 bananas, mashed

  • 1/3 cup coconut oil, melted

  • 1/4 cup brown sugar

  • 1 egg

  • 1/2 tbs vanilla extract

  • 1/2 cup chocolate chips

Method:

  1. Preheat the oven to 350°F.

  2. Sift together all dry ingredients.

  3. In a separate bowl, mash bananas and add coconut oil, brown sugar, egg, and vanilla extract.

  4. Pour flour mixture into wet ingredients and mix until just combined.

  5. Fold in chocolate chips.

  6. Bake for 20-25 minutes.
