Orange Cranberry Muffins

My very first job was at McDonald’s, and I loooved their orange cranberry muffins. What if I told you you could recreate those muffins with probably half the calories? Look no further.

Ingredients:

  • 2 cups all-purpose flour

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup vegetable oil

  • 1/4 cup sugar

  • 2 large eggs

  • 1/2 cup milk

  • Zest of one orange

  • 1 tsp vanilla extract

  • 1/4 cup freshly squeezed orange juice

  • 1 & 1/2 cups fresh cranberries

Method:

  1. Preheat oven to 425°F. Line a 12-cup muffin tray with paper liners.

  2. In a large bowl, combine the flour, baking powder, and salt. Set aside.

  3. In a medium bowl, whisk together the vegetable oil, sugar, eggs, milk, orange juice, vanilla, and orange zest. Slowly add to the dry ingredients. Mix until just combined, then fold in the cranberries. Divide the batter into the 12 muffin cups.

  4. Bake at 425°F for 5 minutes, then reduce the oven temp to 375°F and bake for another 13 minutes or until a toothpick inserted into the center comes out clean.
