Cranberry Chocolate Oatmeal Cookies

Lately I’ve gotten hooked on oatmeal cookies. There are so many flavor combinations to choose from and this cranberry-chocolate combo is one of my favorites. Great to make on the weekend for a quick snack throughout the week.

Ingredients:

  • 1/3 cup butter, softened

  • 1/3 cup brown sugar

  • 1 egg

  • 3/4 cup quick oats

  • 3/4 cup flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup dried, unsweetened cranberries

  • 1/3 cup chocolate chips (white, semi-sweet, or dark!)

Method:

  1. Heat the oven to 375ºF.

  2. Beat butter and sugar together until light and fluffy. Add egg and mix well.

  3. Combine oats, flour, baking soda, and salt in a separate bowl.

  4. Add to butter mixture in several additions, mixing well after each addition.

  5. Stir in dried cranberries and chocolate chips.

  6. Roll rounded teaspoonful amounts into balls. Flatten slightly and then place on parchment paper lined baking sheet.

  7. Bake for 12 minutes. Yields 1 dozen cookies.
