Cranberry Orange Scones

I recently ran out of fresh cranberries. Instead of buying frozen ones, I decided to make use of the neglected dried cranberries in my cupboard. These scones are so good heated up with a little butter!

Ingredients:

  • Grated peel of one large orange

  • 1/4 cup granulated sugar

  • 1 cup whole wheat flour

  • 1 cup all-purpose flour

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup cold butter, cut into 8 pieces

  • 1 1/2 tsp white vinegar

  • 1/3 cup milk

  • 1/4 cup orange juice

  • 1/2 cup dried cranberries

  • 1/3 cup powdered sugar

  • 2 to 3 tsp milk

Method:

  1. Heat oven to 350°F.

  2. Using your fingers, rub together the orange zest and sugar.

  3. Combine the dry ingredients (flours, sugar, baking soda, and salt).

  4. Add dry ingredients to food processor. Add butter pieces and pulse until no large butter chunks remain.

  5. Add vinegar, milk, and orange juice and pulse until combined.

  6. Add dried cranberries and pulse just once or twice until cranberries are well distributed.

  7. The mixture should be easy to work with (not too sticky). Turn onto lightly flowered surface and form into 8-inch round. Do not overwork the dough.

  8. Cut into 8 pie-shaped pieces and place on parchment lined baking sheet, a few inches apart.

  9. Bake for 20 to 25 minutes or until golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool 10 minutes.

  10. In small bowl, mix powdered sugar and 2 to 3 teaspoons milk until thin enough to drizzle. Drizzle over cooled scones. Serve warm or cool.
