Pannekoeken (baked apple pancake)

Inspired by this recipe, the Pannekoeken is a Dutch pancake that is larger and much thinner than American pancakes, but not as thin as crêpes. The buttery crust is delicious, and it is so easy to whip up!

Ingredients:

  • 2 eggs

  • 1/3 cup flour

  • 1/3 cup milk

  • 2 tbs sugar

  • 1⁄4 tsp salt

  • 1 medium apple, peeled and diced

  • 1 tbs butter

  • 1⁄4 teaspoon cinnamon

  • 1 tbs sugar

Method:

  1. Heat oven to 400°F.

  2. Beat eggs, flour, milk, sugar and salt in small mixing bowl on medium speed for 1 minute.

  3. Fold apples into mixture.

  4. Place butter in a 8x8 pan and put in oven just until melted. Remove pan from oven and pour batter into pan.

  5. Combine sugar and cinnamon and sprinkle over mixture.

  6. Bake uncovered until puffed and golden, about 25-30 minutes.
