Dark Chocolate Pistachio Bars

I recently bought a bag of pistachios for my Persion Love Cake recipe. I was thinking of other ways to use them, and thought they would pair well with dark chocolate. These cookie bars come together really easily and can be stored in an air-tight container for up to a week.

Ingredients:

  • 1/2 cup butter, softened

  • 1/4 cup brown sugar

  • 1/4 cup white sugar

  • 2 eggs

  • 1 1/2 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup dark chocolate chunks

  • 1/3 cup chopped pistachios

  • Dark chocolate chunks and chopped pistachios for topping

  • Coarse sea salt

Method:

  1. Preheat oven to 350°F. Line a 8x8 baking dish with parchment paper.

  2. With an electric hand mixer, cream together butter, brown sugar, and white sugar. Beat in eggs and vanilla extract until creamy.

  3. In a medium bowl, whisk together flour, baking powder, and salt. Add dry ingredients to wet ingredients, and beat until combined.

  4. Stir in dark chocolate chips and chopped pistachios. Dough will be thick and sticky. Spread dough into prepared baking dish.

  5. Sprinkle toppings of dark chocolate, pistachios, and sea salt over the dough.

  6. Bake for 25-30 minutes.

  7. Remove baking dish to a wire rack and allow to cool for 15-20 minutes before cutting into pieces.
