Bhindi Masala

Okra is one of those vegetables that you’ve probably never noticed at the grocery store. Or you have, thought to yourself “that’s a weird vegetable” and walked away. Well, next time, grab a bagful and try this recipe!

Ingredients:

  • 250 grams okra

  • 3 tbs vegetable oil

  • 1/2 tsp cumin seeds

  • 1 cup onions, diced

  • 2 chilies, finely chopped

  • 3/4 tbs ginger-garlic paste

  • 2 medium tomatos, diced

  • 1/2 tsp salt

  • 1/4 tsp turmeric

  • 1 tsp chili powder

  • 1 tsp garam masala

  • 3/4 tsp coriander

  • 1/2 cup water

  • Parsley, chopped

Method:

  1. Wash okra well. Dry completely and then chop off both ends and cut into 3/4-inch pieces.

  2. Heat oil in a pan. Sauté okra for 5-7 minutes until they are partially cooked. They should not be slimy.

  3. In a separate wok, add cumin seeds to some oil. When they begin to splutter, add the onions and chilies and sauté until they are caramelized.

  4. Add ginger-garlic paste and sauté for a minute or two.

  5. Next, add the tomatoes and salt and cook until they are soft.

  6. Stir in the spices and sauté some more.

  7. Add the water and cook the masala until it thickens.

  8. Add the okra and cover and cook on a low heat until the okra is fully cooked (should be soft and not bitter).
