Aloo Paratha

Aloo = potato, paratha = a South Asian flatbread

A delicious potato-stuffed flatbread that can be eaten any time of the day!

Ingredients:

Paratha

  • 2 1/2 cups whole wheat flour

  • 1/2 tsp salt

  • 1 tbs vegetable oil

  • Water as needed for kneading

Filling

  • 4 medium potatoes

  • 2 green chilies, finely chopped

  • 1 tsp ginger, grated

  • 1 tsp salt

  • 1 tsp garam masala

  • 3/4 tsp chili powder

  • 1 tsp coriander powder

  • 3/4 tsp chaat masala

  • 1/2 tsp fennel seeds

Method:

  1. Boil potatoes just until fork tender.

  2. While the potatoes boil, make the dough. Combine flour, salt, and vegetable oil. Pour 1/2 cup water and begin to form a dough. Add more water as needed to make a soft yet non-sticky dough (if you press down with your finger, it should dent easily). Cover and let rest until the filling is ready.

  3. When the potatoes are done, let them cool before peeling. Grate with large slot box grater. Do not over mash.

  4. Fold in all other ingredients and divide the filling into 8 equal parts. Also divide the dough into 8 parts.

  5. Roll out the dough to a 4-inch disc. Place the filling ball in the middle and bring up the sides to cover completely. Push the stuffing around with your fingers before rolling out.

  6. Gently roll the paratha ensuring no filling comes out. Cook over medium-high flame with ghee.

  7. Serve with yogurt or achar.
